Excellent project and resulting model. Really shows off how the Saturn boosters were modules that could be configured for various missions. NASA and the engineers developed a wonderful booster system.
 
Interestingly enough, over at NSF (http://forum.nasaspaceflight.com/index.php?topic=26667.0) there's an on-going thread for "What if Apollo/Saturn had Never Been Cancled?" We're up to 41 pages but interestingly enough the last dozen or so have been looking at "alternate" launchers other than the many Saturn-V variants that everyone seems to prefer. Titan varients abound of course but during the discsussions several people sat back and re-examined the Saturn-1B and varients.

It's really interesting to speculate, (of course :) ) but there appears to be some rather good "arguments" that rather than pursueing continued Saturn-V (S1/F1-hardware) production that more work and interest should have been done on the Saturn-1B and advanced variants. The H1 engines were real work-horse engines, and as recovery/refurb/re-fire tests showed they were really, really tough too.

The Saturn Int-20 would have be a wonderful launch system
Especially with F-1A and J-2S engine and removal of the Fins (-3.8 tons on launch mass)

From your pictures I can see you've discovered the Project Apollo - NASSP site. The wiki has a section labled Future expansion which contains quite a few Saturn variants.

There are pictures, but, with the NTRS down many of the documents are not downloadable.
