Here we see 2 guns, one belt fed, one fed with stripper clips. Neither user seems to have a good source on which is the Mendoza 1911.

What are these guns actually called, and as such which is the Mendoza 1911?
What are the actual histories of these guns, and as such what is their relation to one another?

Well, the uppermost photo of the belt-fed gun had the date "Oct. 16 -1911." at the bottom of the image although that has been cropped off of your version. So, it is a 1911 gun but not necessarily the 1911 gun

BTW, has anyone seen a copy of Machine Guns of the Mexican Revolution (self-published by Luis Eduardo González in 2022)?
