Thanks for sharing! I think, that V-tailed "jet" could be a preliminary version of
Fouga CM.8 R.9 Cyclope

And the right answer is:

Hydroplanes needs to be examined closely. Perhaps, these have been Couzinet' designs? The poster near them and slogan above could be the clue.
 
The Jet powered speedboat is also interesting, as is the model in the case behind it.
 
Sorry can't help much with the planes and flying boat models, but ,
that jet boat seem to be the Hydroglisseur Type 60 by Couzinet powered by a Turbomeca jet, and indeed presented at the 1951 Salon de l'Aeronatique.
The banner marked "COUZINET" , the speedboat, the Couzinet 71 poster , and also the shape of the wing of the Flying boat model would point to a Couzinet project.

The flying boat is the Couzinet "Normandie I" project : 4x840hp motors ...

The four engined monoplane with twin rudder shows the Couzinet B4 bomber : 2 built just before the war , and destroyed by the Germans in 1941 .

The single engined monoplane is a tandem two seater project .
